Crepes
3 eggs
1/2 tsp. salt
2 c. + 2 tbsp. flour
2 c. milk
1/4 c. melted butter
Beat eggs and salt . Add flour alternately with milk , beating with mixer or whisk until smooth . Stir in melted butter . Allow crepe batter to stand for 1 hr. or more in refrigerator before cooking . The batter should be the consistency of heavy cream . If batter is to thick , add 1 – 2tbsp. of milk ; stir well .
Heat 7 or 8 inch non stick skillet to med. heat . Spray lightly . While lifting pan off heat , pour 3 tbsp. batter into pan . Quickly rotate pan until batter covers bottom ; return to heat . Cook until light brown ; turn and brown other side for a few seconds .
This is very easy with just a little practice . Remember you must use a non stick pan . Here is our favorite topping .
Strawberry Mascarpone Filling
1 c. mascarpone
2 tbsp. 10x sugar
3 -4 tsp. fresh basil
1 tsp lemon juice
1 1/2 c. sliced fresh strawberries
In a small bowl , combine the cheese , sugar , basil and lemon juice . Gently fold in strawberries. Cover and refrigerate at least 30 min.
As for the bananas foster , I'm not sure I have only used cast iron to make them . I'm sure it would work though try it , if you need a recipe , I have two really good ones .
